Sugar-Free Rhubarb & Apple Compote

Ingredients

1 1/2 cups of diced sweet apples
2 cups of chopped rhubarb
1 teaspoon cinnamon
1 teaspoon nutmeg
1 1/2 tablespoon orange zest
3/4 cup apple juice

Directions

Place all ingredients in small saucepan. Bring to boil, reduce heat. Simmer for 15 minutes, test for done-ness. Cool for serving.

Looks so good Gill! They are always great, but a particularly good combination of veg for us this week! Just made a veggie lasagne with the squash, leeks and mushroom. Yum! X
