Roasted garlic pesto

Ingredients

10-15 large garlic cloves
1/2 cup pine nuts / macadamias
2 tbsp lemon juice (or 1 tbsp apple cider vinegar)
1/4 cup olive oil
salt and pepper
fresh herbs (optional)

Directions

Roast the nuts for 15 mins at 170C and the garlic until soft. Squeeze the garlic out of it's skin into a food processor. Add the nuts, oil and lemon juice (and optional herbs e.g. parsley, rosemary, oregano, basil). Process and slowly add the olive oil. Season with salt and pepper. Delicious spread on warm crusty bread.

Looks so good Gill! They are always great, but a particularly good combination of veg for us this week! Just made a veggie lasagne with the squash, leeks and mushroom. Yum! X
