Honey and Citrus Cheesecake


50g wholemeal breadcrumbs
25g rolled oats
25g butter softened
25g freshly ground almonds,plus(optional) 1-3 drops of almond essence

500g low fat smooth cheese
2 tbsp honey or honeycomb
100-150ml thick low fat natural yoghurt
40g dried fruit such as sultanas, raisins, dried apricots
4-5 drops vanilla essence
grated zest of 1 or 2 lemons

About 220g mixed fresh fruit in season


Preheat oven to 190C. In a bowl, combine the breadcrumbs,oats and butter with a fork until well mixed.Stir in almonds and almond essence. Grease an 18cm round springform pan. Press mixture down with a fork until smooth, then bake for 20 mins.

For the filling,mix the soft cheese with honey and enough yoghurt to make a smooth thick paste. Stir in the dried fruit, vanilla essence and lemon zest. Taste to check the balance of sweetness and citrus flavour and adjust if necessary.

Spread on top of the base and chill for at least 1 hour. Top with fresh fruit just before serving.
