Apple Date Cake

Ingredients

3/4 cup chopped dates
1'2 cup brandy or similar
2 cups flour
2 cups soft brown sugar
2 teaspoons baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
4 cups apples, peeled, cored and chopped
1/2 cup melted butter
2 eggs, lightly beaten

Directions

One hour before baking place dates and brandy in a bowl. Stir periodically. Heat oven to 175 and prepare square cake pan. In a large bowl sift together flour, sugar, baking soda, cinnamon, nutmeg and salt and mix together. Add the apples and dates with the melted butter and eggs. Stir the mixture together will be quite heavy and stiff. Spread into your greased pan and bake for one hour approximately. Remove from oven and either serve warm with yoghurt or cream or cool for later.
