Soba Noodle Salad

Soba Noodle Salad

Ingredients

For the Salad

1 head red summer crisp lettuce, chopped
1 package soba noodles (9.5 ounces)
2 large cucumbers, and diced
3 nectarines, peeled and diced
1 cup grated carrots
1 cup thinly sliced red cabbage
1 cup cashews

Tangy Sesame Dressing

½ cup sesame oil (can substitute olive oil)
½ cup orange juice
⅓ cup rice vinegar
¼ cup reduced-sodium soy sauce
⅛ cup honey
2 tablespoons ginger
1 tablespoon minced garlic

Directions

Bring a pot of water to boil, then add soba noodles

Boil for about 4-5 minutes, then pour into strainer and run cold water over noodles

Once cooled, add lettuce, noodles, and the remaining ingredients to a large serving bowl

Add ingredients for dressing into a mason jar

Shake well, then pour over salad, mix in, and serve!

Looks so good Gill! They are always great, but a particularly good combination of veg for us this week! Just made a veggie lasagne with the squash, leeks and mushroom. Yum! X
