Creamy Butternut Squash Soup

·1 butternut squash
·1/2 cup cashews
·3 large garlic cloves
·1 teaspoon ginger, grated
·1 tablespoon turmeric
·1 teaspoon sea salt
·1/2 teaspoon black pepper
·2.5 cups water
·Few sprigs of fresh parsley
·Toasted cashews, for topping
Looks so good Gill! They are always great, but a particularly good combination of veg for us this week! Just made a veggie lasagne with the squash, leeks and mushroom. Yum! X
